Gears 5 builds on the franchise to offer a deeply satisfying campaign on the slick console port. Like a fine wine, the series gets better with age.
Games engines react to platforms in varying ways. Gears 5 certainly prefers Intel, as the Core i9-10900K stretches it legs at FHD and QHD. The gap is significant at the medium resolution, and it's only at 4K where AMD is able to gain (and even marginally exceed) Intel.
The takeaway thus far is that you have to examine the resolution you play at and then cross-reference that to the games engine. If the plan is to play at 4K, both platforms are a good choice.
